INGREDIENTS: Raw Sugar, White Vinegar, Water, Chillies (Thai Birds Eyes, Cayenne, Aji Limon), Fresh Garlic, Fresh Ginger, Onion, Capsicum, Sea Salt and Spices.
FLAVOUR: There is so much complexity going on for such a simple style of sauce, you will get notes of sugar caramelisation, fresh aromatic ginger, savoury garlic and onion, roasted capsicum, and fragrant Thai Birds Eye and Aji Limon chillies. A lick of vinegar provides acidity and freshness.
HEAT: Mild (2/10).
POUR: Medium thickness with noticeable chunks of chilli flesh and seed.
PAIRING: Great as a dipping sauce for spring rolls or rice paper rolls, ham and cheese toasties, fried chicken sandwiches, omelettes.
